Cranberry Coconut Cofee Cake

- 1 (18.25 oz) pkg yellow cake mix
- 1 (3.4 oz) pkg vanilla instant pudding
- 5 lg eggs
- 1/2 c bourbon - optional
- 1/2 c milk
- 1/2 c vegetable oil
- 2 c fresh or frozen cranberries, thawed and chopped
- 1 c chopped pecans
- 1 c flaked coconut
- sifted powdered sugar
Instructions
- Combine first 6 ingredients in a large mixing bowl; beat at low speed with an electric mixer until smooth. Beat at high speed 3 minutes.
