    Makes 1 serving.


    List of Ingredients


    • 2 slices of firm bread
    • 3-4 slices of mozzarella cheese
    • 1 bunch Arugula leaves
    • 2-3 tbsp sund dried tomatoes
    • Butter


    Instructions


    1. Arrange cheese on one slice of bread. Add arugula and tomatoes. Top with second slice of bread.
    2. Butter both sides of bread and cook in panini makeer or in a skillet with weight to "smush" sandwich.
    3. Cook 4-6 minutes or until both sides are golden brown and cheese is melted.
