- 2 lbs ripe tomatoes, coarsely chopped (about 5 cups)
- 1/2 cup chopped red onion
- 2 tbsp plus 1/4 cup chopped fresh cilantro, divided
- 2 tsp chopped chipolte pepper in adobo sause
- 1 cup fresh corn kernels (from about 2 ears)
