¼ C plus 2 T butter or margarine
2 eggs, beaten
2/3 C green onions, chopped with tops
2/3 C sweet red pepper, chopped
2 2/3 C cooked rice
¼ C soy sauce
Recipe
Cook egg in melted butter in a large skillet until almost set . Stir in green onions, red pepper and rice. Cook stirring frequently about 5 minutes or until lightly browned. Add soy sauce and cook about 2 minutes. Serve immediately. About 8 servings.
