1 cup chopped vidalia onion
1/2 Tbsp butter
2 large yellow summer squash
3 Tbsp fat-free half and half
6 oz shredded Kraft Cracker Barrel 2% Extra Sharp Cheddar Cheese
6 Tbsp. Durkee Cheddar Onions
2 large eggs, lightly beaten
1 tsp Dijon mustard
Salt

Recipe
Saute the chopped onion in butter for about four minutes or until tender. Slice squash into 1/4 inch slices and steam for four minutes. Add steamed squash to the onion. Continue to saute for three minutes. Add half and half and saute for another two minutes. Turn off heat.
Stir in 4 ounces of the shredded cheddar, mustard, 2 TBSP of the durkee cheddar onions and the eggs. Add salt and pepper to taste. Pour mixture into 2 qt. casserole.
Top with remaining cheddar cheese and 4Tbsp Durkee onion. Bake at 350 for about 30 minutes or until set.
