    Slow cooker enchiladas

    Recipe Introduction


    This is my favorite. My kids can't eat enough.


    List of Ingredients


    • 1 lb ground beef
    • 1 cup chopped onion
    • 1/2 cupp chppoed green pepper
    • 1 16oz can of pinto beans rinsed and drained
    • 1 can of black beans (15oz) rinsed and drained
    • 1 10oz can of diced tomatoes and green chiles
    • 1/3 cup water
    • 1 teaspoon chili powder
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon salt
    • 1/4 teaspoon pepper
    • 1 cup shredded cheddar cheese
    • 1 cup shredded monterey jack cheese
    • 6 flour tortillas (6 or 7 inch size)


    Instructions


    1. in skillet cook beef, onion, green pepper until beef is browned.
    2. Drain
    3. Add the next eight ingredients.

    4. Bring to boil and reduce heat
    5. simmer for 10 minutes
    6. combine cheeses in a bowl
    7. In Crockpot layer about 3/4 cup beef mixture, one tortilla, and 1/3 cup cheese.
    8. repeat layers.
    9. cover and cook on low for 5-7 hours or until heated through.
    10. serves approx 4 to 6
