Another fantastic easy recipe with lots of variations, Although if using mini loaf pans only cook about 30 minutes.
List of Ingredients
1 ¾ C flour
½ Tsp salt
1 Tsp baking soda
1 Tsp Cinnamon
¼ Tsp Nutmeg
¼ Tsp groung cloves
3 Lrg Eggs
½ C Vegetable Oil
¾ C Sugar
1 Tsp Vanilla
¾ C. applesauce (see variations below)
Recipe
Preheat over to 350 F. Grease the bottom of 9x5 inch loaf pan, in a bowl sift or stir together flour, salt, baking soda, cinnamon, nutmeg and cloves. In a separate bowl, beat eggs, oil and sugar till light and fluffy. Add Vanilla and applesauce; mix 30 strokes or 30 seconds with a mixer at low speed. Mix flour mixture into egg mixture, using about 30 strokes or 30 seconds on low speed. Pour batter into pan. Bake for 65 to 70 minutes or until toothpick inserted in the center comes out clean. Remove bread from oven and cool in pan for 10 minutes. Remove bread from pan and finish cooling on a wire rack.
Variations:
Banana Bread: Omit cinnamon, nutmeg, and cloves. Increase sugar to ¾ C. + 3 Tbs. Substitute 1 C. mashed banana for the applesauce.
Pumpkin Bread: Decrease baking soda to ½ Tsp. Add ½ Tsp baking powder. Decrease Cinnamon to ½ Tsp. Increase ground cloves to ½ Tsp. Increase sugar to ¾ C. + 3 Tbs. Substitute 1 C. cooked or canned pumpkin puree for the applesauce.
Zucchini Bread: Decrease baking Soda to ½ Tsp. Add ½ Tsp baking powder. Increase sugar to ¾ C + 3 Tbs. Omit nutmeg and cloves. Substitute 1 C paked grated unpeeled zucchini for the applesauce.
