    Pumpkin Chocolate Chip Cookies

    List of Ingredients


    • 1/2 C. softened butter or margarine
    • 1/2 C. brown sugar
    • 1/2 C. sugar
    • 1 egg
    • 1 C. canned pumpkin
    • 1 Tbs. Honey
    • 2 C. flour
    • 1 Tsp baking soda
    • 1/2 Tsp. salt
    • 1 Tsp Cinnamon
    • 1 to 2 bags chocolate chips


    Instructions


    1. Using an electric mixer, cream together butter and both sugars. Add egg mixing well. Add Pumpkin & honey mixing well.

    2. Add 1 C. of the flour to the bowl and sprinkle the baking soda and salt on top of it, then add the other C. flour and the cinnamon. mix thouroughly. smell the mix, it should smell equally of cinnamon & pumpkin, add more cinnamon if necessary.

    3. Stir in chips by hand. Drop from spoon onto ungrease cookie sheets.

    4. Bake in a pre-heated oven of 375 degrees for 12 to 15 minutes. remove from cookie sheets immediately to a rack to cool. Store in a air tight container. Yield 3 to 4 doz depending upon cookie size.



    Final Comments


    These cookies freeze well; use freezer zip lock baggies. because of the honey they will remain moist when thawed. Buy a lg can of pumpkin and triple the recipe for around 12 doz cookies. they make great gifts.
