    I found this recipe in the above book and it is absolutly fantastic.

    List of Ingredients

    1C. Grated Unpeeled Zucchini
    ¾ C. Sugar
    1 Stick ( ½ C.) Butter or Shortening, Softened, or Vegetable Oil
    1 Lrg Egg. Beaten
    1 Tsp. Vanilla
    1 C all-purpose flour
    1 C Whole Wheat Flour
    1 Tsp Baking Soda
    ½ Tsp Salt
    ½ Tsp Nutmeg
    ½ Tsp ground Cloves
    1 Tsp Cinnamon
    1 C Raisins
    ½ C chopped Walnuts, Optional

    Recipe

    Preheat oven to 375 degrees F. Beat grated zucchini, sugar, butter, egg and vanilla togther in a large bowl. In a separate bowl, sift or stir Together all-purpose flour, whole-wheat, baking soda, salt, nutmeg, cloves and cinnamon. Add flour mixture to zucchini mixture; mix thoroughly. Stir in raisins and nuts. Drop by teaspoonsful, 1 ½ inches apart, onto a greased baking sheet. Bake for 12 to 15 minutes. Remove cookies to a wire rack to cool.

    Makes 4 Doz. (2-inch) Cookies
