    A taste of Tuscany without the expense


    List of Ingredients


    • 8 lamb rib chops - 1 inch thick
    • 2 teaspoons olive oil
    • 3 cloves garlic, minced
    • 19 oz can cannellini beans, rinsed & drained
    • 8 oz can Italian-style stewed tomatoes
    • 1 tablespoon balsamic vinegar
    • 2 teaspoons fresh rosemary


    Instructions


    1. In large skillet, cook chops in hot oil over medium heat for 9 to 11 minutes, turning half way through.
    2. Transfer cooked chops to plate, keep warm.
    3. Stir garlic into drippings in skillet. Cook and stir for one minute.
    4. Stir in beans, tomatoes, vinegar and snipped rosemary. Bring to boiling;reduce heat.
    5. Simmer, uncovered for 3 to 4 minutes.
    6. Spoon bean mixture onto 4 dinner plates; arrange 2 chops on each plate.
    7. Serve with Italian bread and salad.
