List of Ingredients
- 8 lamb rib chops - 1 inch thick
- 2 teaspoons olive oil
- 3 cloves garlic, minced
- 19 oz can cannellini beans, rinsed & drained
- 8 oz can Italian-style stewed tomatoes
- 1 tablespoon balsamic vinegar
- 2 teaspoons fresh rosemary
Instructions
- In large skillet, cook chops in hot oil over medium heat for 9 to 11 minutes, turning half way through.
- Transfer cooked chops to plate, keep warm.
- Stir garlic into drippings in skillet. Cook and stir for one minute.
- Stir in beans, tomatoes, vinegar and snipped rosemary. Bring to boiling;reduce heat.
- Simmer, uncovered for 3 to 4 minutes.
- Spoon bean mixture onto 4 dinner plates; arrange 2 chops on each plate.
- Serve with Italian bread and salad.
