Roasts for almost two hours. Aromatic and divine!
List of Ingredients
one whole chicken
one lemon
one orange
one garlic bulb
LIQUID FOR BASTING:
juice of one lemon 1/4c orange juice concentrate, thawed
3 garlic cloves, minced
fresh oregano
salt

Wash chicken and pat dry, removing giblets. Salt and pepper inside cavity, rubbing into sides. Quarter a lemon and an orange. Cut garlic bulb in half. Stuff all into chicken cavity. Tie chicken legs together, closing cavity. Roast chicken for one hour at 400 degrees. Baste with liquid (recipe above). Add chicken stock to roasting pan to prevent burning on bottom of pan. Continue roasting for 45 more minutes, basting occasionally. Remove from oven. Let rest. Remove items from cavity. Put roasting pan on stovetop to simmer. Scrape pan drippings from bottom. Let reduce for 4-5 minutes. Add salt. Remove from heat. Use mesh strainer to strain off any solids. Skim fat off top. Serve sauce from gravy boat. OPTIONAL: Serve on platter with sliced lemon and orange garnish. Stuff fresh oregano sprigs into cavity opening.
