    One of the best soups I have ever made

    List of Ingredients




    2 T oil (I use Pam)
    1 onion, finely chopped
    2 carrots, cut into rounds
    10 oz mushrooms, sliced
    1 c pearl barley
    1/2 t dried oregano
    1/2 t dried thyme
    6 c chicken broth/stock
    salt and pepper
    *add leftover meat e.g. turkey, chicken, or pot roast, if desired

    Warm oil in large saucepan over medium heat. Add onion and carrots and cook, stirring occasionally, until softened, about 8 minutes. Add mushrooms and cook until they release their liquid, about 5 minutes. Add barley, oregano and thyme and stir one minute. Add broth and bring to a boil. Lower heat, cover and simmer until barley is tender, about 30 minutes. Season with salt and pepper and serve. 294 cal, 8g fat, 10g fiber, 10g pro, 48 carb, 737 sodium
