List of Ingredients
1/3 cup onion, chopped
1/4 cup green pepper, chopped
2 teaspoons olive oil
6 ounces lean ham or Canadian bacon, cut in thin strips
2 medium potatoes, cooked, peeled and cubed (you can use frozen hash browns)
3/4 teaspoon salt, divided
6 eggs, beaten
2 Tbsp. water

In skillet, cook onion and green pepper in oil till crisp-tender. Add ham, potatoes, and 1/4 tsp. salt; cook over medium heat for 10 minutes, stirring occasionally.
Combine eggs, remaining 1/2 tsp. salt, and dash pepper; pour over ham mixture. Cook over low heat, turning occasionally, till eggs are set.
Trim with parsley if desired.
