Polenta French Toast - Core

Mix 1.5 T corn meal with sprinkle of cinnamon and dash of salt in a cereal bowl. Add 3 T. water. Drizzle 1/2 tsp sf maple syrup into mixture. Put into microwave for about 2.5 mins. When done, transfer round to plate. Repeat this step one more time.
Spray skillet with nonstick spray and heat. Mix 1 egg white, bit of soy milk and one no-cal sweetener packet.
Dip each polenta round into mixture and place in hot skillet. Flip when first side is browned.
I sprayed these with ICBNB and put another tsp of sf syrup on each.
This was so delicious! Better than using bread!
***Just a note - SF maple syrup is not Core, but used sparingly has 0 points.
