lemon meringue pie! it's great hot and hope it's good cold!
i used 1/4 C cornstarch and that's 2.5 pts for the whole pie......everything else was core.
i couldn't get the egg whites to stiffen so i just poured it over the lemon mixture and baked it....not meringue but not bad....will scoop it off if i really don't like it when it cool.
here's the recipe is you want to try it. i replaced the cup of sugar it called for with Splenda and it seemed to work ok for me.
3 egg yolks
1 C Splenda
1/4 C cornstarch
1/4 C lemon juice
1 1/2 C water
1 T ff margarine
mix the egg yolks with a fork, add corn starch, lemon juice and splenda and mix it in. then add the water and blend it.
bring to boil on stove - stir constantly. reduce heat and simmer 5mins stirring constantly. remove from heat, add margarine and pour in pie plate or whatever you want to use. i would suggest using glass since i think eggs can do something weird with metal but not sure.
for the meringue
3 egg whites
6 T spelnda
1/4 tsp? cream of tartar
beat until stiff.....top the lemon mixture and bake 8-10mins until meringue is brown.
