    Makes 8 servings. Per serving (filling only without egg whites): 82 calories. 4.5g protein. Less than 1g fat. 15g carbohydrate. 55mg sodium. 0mg cholesterol. Less than 2 pts per slice using maple syrup on Core or 1 pt with sub sweetner. 4 pts for Flex.

    List of Ingredients




    1 ½ pkgs (10.5 oz) Mori-Nu Lite ex-Firm Tofu
    2 cups cooked sweet potatoes (2 medium)
    ¼ cup maple syrup
    1 tsp vanilla
    1 tsp ground cinnamon
    1/8 tsp ground nutmeg
    ½ tsp ground ginger
    2 egg whites (optional. Prevents filling from cracking)
    1 unbaked 9¡¨ pie crust (or 9 - 2 ½ in graham cracker squares*)

    Recipe



    Preheat oven to 400„aF. Drain tofu and blend in a food processor or blender until smooth.
    Add remaining ingredients and blend well. Pour into 9¡¨ pie crust. Bake in 400„aF oven for 10 minutes, then lower oven to 350„aF and bake approximately 25-30 minutes longer or until toothpick inserted in center comes out almost clean. Refrigerate overnight for best texture.

    *For low-fat pie crust, crumble graham crackers. Spray glass 9¡¨ pie pan and cover with crumbs. (Approximately 1 point per slice of crust ).
