Sweet Potato Tofu Pie - Core

To make Core, replace maple syrup with maple extract and vanilla sf syrup
List of Ingredients
1 ½ pkgs (10.5 oz) Mori-Nu Lite ex-Firm Tofu
2 cups cooked sweet potatoes (2 medium)
¼ cup maple syrup
1 tsp vanilla
1 tsp ground cinnamon
1/8 tsp ground nutmeg
½ tsp ground ginger
2 egg whites (optional. Prevents filling from cracking)
1 unbaked 9” pie crust (or 9 - 2 ½ in graham cracker squares*)Recipe
Preheat oven to 400F. Drain tofu and blend in a food processor or blender until smooth.
Add remaining ingredients and blend well. Pour into 9” pie crust. Bake in 400F oven for 10 minutes, then lower oven to 350F and bake approximately 25-30 minutes longer or until toothpick inserted in center comes out almost clean. Refrigerate overnight for best texture.
*For low-fat pie crust, crumble graham crackers. Spray glass 9” pie pan and cover with crumbs. (Approximately 1 point per slice of crust ).
Makes 8 servings. Per serving (filling only without egg whites): 82 calories. 4.5g protein. Less than 1g fat. 15g carbohydrate. 55mg sodium. 0mg cholesterol. Less than 2 pts per slice using maple syrup on Core or 1 pt with sub sweetner. 4 pts for Flex.
