    Potato Crust Quiche - Core

    2 cups of shredded frozen hashbrowns, mix with one beaten egg (or egg beater equivalent). Press into bottom of greased pie pan, bake for 20 min at 350*.

    Beat 6 eggs, or egg beater equivalent. Mix in 1/4 cup fat free evaporated milk.

    Then mix in 1 cup cheese of choice.

    Add whatever veggies you like, as long as they are diced finely. I used mushrooms, spinach, and green onion this time. I have also used broccoli.

    Add any diced meat, like ham, bacon, canadian bacon, etc. The one I made this week is meatfree.

    Salt and pepper to taste

    Pour mixture over pre-baked crust, bake another 30 min at 350*.
