    Spinach Polenta Bake - Core

    Note: since this is core, I doubled I used more mozz than the recipe asks more. Amazingly, b/c the mozz is between moist items, it melts quite nicely!

    List of Ingredients




    You need: 1 lb premade polenta (or make your own), 2 10 oz boxes of frozen spainach, 2 8 oz cans of tomato sauce, 3/4 cup ff mozzarella, 1 TB olive oil, italian seasoning

    Recipe



    Cook the spinach according to package directions; drain thoroughly and set aside. Slice the polenta into 12 pieces. Preheat the oven to 375F. Spray a 13x9" baking dish with nonstick cooking spray. Add italian seasoning to taste to tomato sauce. Spread 1 cup of the Tomato Sauce evenly over the bottom of the dish. Spread the Polenta in an even layer over the Tomato Sauce. Arrange the spinach evenly over the polenta; sprinkle the mozzarella evenly over the spinach. Top with the remaining 1 cup sauce; drizzle olive oil on top. Bake the polenta about 15-20 minutes, until the cheese and sauce are bubbling. Cut into 4 equal pieces and serve.
