    1/2 cup canned pumpkin
    1/4 cup Fat Free ricotta cheese
    1/2 cup Egg Beaters
    1 tsp cream of tartar
    Pumpkin Pie Spice to taste
    Splenda to taste
    Cinnamon & nutmeg to garnish

    Combine all with whisk or small food processor. I've been playing with cooking methods. I first placed it in a microwave safe dish and nuked for about six minutes. I've also tried it in the oven by placing in glass or ceramic ramekins and placing on a cookie sheet with another ramekin filled with water. Baked at 350 for about 40 min. I'm still totally unsure what the best method is. The oven method was much prettier and had a nice crust effect on top. Micro was easy and yummy but a little unspectacular. Either way, sprinkle the cinnamon and nutmeg on the top before cooking and it looks really pretty. Next time, I’m going to try beating the Egg Beaters and cream of tartar together before adding the other ingredients to see if that effects the texture to make it lighter
