    List of Ingredients




    5 Egg Whites
    1/2 cup sun dried tomatoes
    5 leaves of fresh basil
    1/4 cup semisoft goat cheese
    cooking spray
    salt and pepper to taste

    Recipe



    Preheat saute or omlette pan on low heat.
    Spray pan with non stick cooking spray (like Pam)
    Rough chop the sun dried tomatoes.
    Julienne basil leaves.
    Lightly whisk egg whites and combine with sun dried tomatoes and basil. Add salt and pepper to taste.
    Pour mixture into pan and let it cook on low heat. Do not stir mixture on pan but you can pull up cooked sides of omlette and let the uncooked mixture fill that space so it cooks a little quicker.
    When egg mixture is cooked, spoon goat cheese onto one side of the omlette and flip the other side up over it.
    Let omlette sit a moment so goat cheese melts.
    Serve with whole wheat bread and fruit for an awesome brunch!
