    Serves 4. You'll need to count points for the pb, but it's just 1/4 cup, for the entire recipe, and I used reduced fat pb.

    List of Ingredients




    1 1/2 or 2lbs boneless skinless chicken thighs
    3/4 cup hot salsa
    1/4 cup peanut butter (I used reduced fat)
    1 T. soy sauce (use nam pla if you prefer)
    2 T. fresh lime juice
    1 tsp. freshly grated ginger

    chopped peanuts for garnish (optional)
    chopped cilantro for garnish

    Recipe



    spray crock put. Put chicken in. Combine salsa, pb, soy sauce, lime juice & ginger. Stir well & pour over chicken. Mix well. Cook on low 8-9 hours.

    Serve w/ "coconut" rice (brown for me, white for hubby). After cookng rice i just stirred in some coconut extract...about tsp...do this to taste....you can always add more.
