    First I thin sliced an eggplant and layed it out on paper towels, salted, towels on top to get the water out.

    Then I thin sliced about 1lb of potatoes.

    Made a Greek tomato sauce w/lean gr beef, onion, gr peppers, oregeno, thyme, marjoram, cinnamon, nutmeg, salt, pepper and some red wine vinegar w/garlic. Oh and canned tomato sauce of course.

    Creamy topping was 1c FF Greek yogurt, 1c FF cottage cheese, 1C FF feta, 1/2c soy parmesan, 1 beaten egg. I think it needed more of a topping then this made.

    In a 9 X13 pan coated w/Pam I layered sauce, egg plant, sauce, potato, FF mozz, egg plant, sauce, cream topping.

    This took an hour to bake at 375. I let it sit out for about 10 min before I cut into it, to let it set. Next time I'm going to roast the eggplant and potatoes in the oven w/some olive oil while the meat is browning to cut down on baking time.
