    1 lg. potato
    4 t olive oil
    chili powder, cayenne pepper and salt to taste

    2 orange roughy fillets
    2 egg whites, lightly beaten
    1/3 c. cornmeal
    1 T chili powder
    cayenne pepper and paprika to taste
    1/2 t salt
    PAM cooking spray

    Preheat the oven to 400.

    Cut the potato into 8 - 12 wedges. Soak the wedges in ice water for 20 minutes. Drain and pat dry with a paper towel.

    Return the wedges to the rinsed out bowl and drizzle with olive oil. Toss well to coat completely. Add the seasonings and toss again, coating completely.

    Turn the wedges onto a foil-lines cookie sheet and arrange so they are upright, balanced on their peel side. Gently place in the oven (I put my tray on a preheated pizza stone.) and bake for about 40 minutes, or until nicely browned.

    About 10 minutes before the wedges are done, combine the cornmeal and seasonings for the fish in a shallow bowl. Pour the egg whites into another shallow bowl. Dip each fillet into the egg whites, coating both sides completely, then dredge in the cornmeal mixture. "Fry" in a PAM-sprayed pan for about 4 minutes on each side, or until just opaque.

    Serve one fillet and half the wedges to each person.
