As needed vegetable oil spray
16 oz. unsalted tomato puree
1 cup water
2 tsp. salt-free dried Italian herb seasoning
3 cloves minced garlic
24 oz. fat-free cottage cheese
1 large shallot
2 cups ww wheat pasta
2 cups fat-free Parmesan cheese
2 oz. fat-free mozzarella Recipe
Preheat oven to 350 degrees. Lightly spray a 9 inch square casserole dish with vegetable oil. Combine tomato puree, water, herb seasoning and 2 cloves of garlic in medium bowl. Combine cottage cheese, shallot and 1 clove garlic in separate bowl. Spoon 1/3 of tomato mixture into a casserole dish. Layer half the pasta. Spoon the cottage cheese mixture over the pasta. Layer 1/3 of the tomato mixture and the rest of the pasta. Sprinkle all the parmesan over the top and then add the remaining tomato sauce mixture. Bake covered for 1 hour. Uncover and top with Mozzarella. Bake uncovered for 5 minutes or until cheese is melted. Let stand for 10 minutes before serving.
