Smoky Mexican Lasagna - Core

2 cloves garlic
1 Cup onion, chopped
1/2 teaspoon cumin
1/2 teaspoon oregano
14 oz can peeled tomatoes
1 chipotle chile canned in adobo, chopped fine
1/2 pound lasagna noodle, cooked
1/2 bunch cilantro
1 Tablespoon tomato paste
salt and pepper
1 Cup ricotta cheese
1 Cup corn, thawed
5 ounces frozen spinach, drained
1 Cup mozzarella cheeseRecipe
1. Saute the garlic and onions over medium heat for 5 minutes. Add the cumin and oregano and saute for 1 minute more. Add chopped tomatoes and chipotle. Cook over low for 30 minutes.
2. Add the cilantro, tomato paste, and salt and pepper to taste.
3. Preheat the over to 350. Spread a thin layer of sauce in a 8X5 pyrex. Add a layer of noodles. Then ricotta, corn, spinach and repeat. Finish with noodles, tomato sauce and mozzarella cheese.
4. Bake, uncovered for 40 minutes.
