Spaghetti & Shrimp Primavera - Core

1 lb spaghetti
1 lb raw shrimp, peeled
1 bag frozen mixed veggies (raw)
1 package ****ake mushrooms, stems cut off, sliced
1 tsp oregano
1 package soy or fat free mozeralla cheese
1 onion, diced
1 jalepeno pepper, chopped
1 can diced tomatoes, or fresh if you didn't get 30 inches of snow two days ago
salt
pepper

Start some salted water boiling for the pasta. Boil it until it's done to your taste, drain, put in large bowl.
In a large skillet you have a cover for, start warming up the veggies in a bit of olive oil. Cover to keep the heat in. No need to thaw them first. Turn occasionally.
When the frozen veggies are thawed, add the diced tomatoes and oregano, salt and pepper to taste, don't drain them first, cover till heated through.
Stir in the shrimps, cover, cook till the shrimpis cooked through, just a few minutes. Remove the cover, let any accumulated liquids boil off a bit.
Pour over the spaghetti, add the cheese, mix well until the cheese is melted, serve.
