    4 cup water
    3/4 tsp table salt
    2 Tbsp olive oil
    1 cup Quaker Oats Enriched Yellow Corn Meal

    Recipe



    Combine water, salt and oil in pan and bring to boil. Add corn meal to boiling water, stirring with wire whisk. Lower heat to medium high and continue cooking and stirring for 5 or 6 minutes. Mixture will thicken to the consistency of cooked oatmeal. Pour cooked polenta onto a lightly oiled pizza pan or a rectangular baking pan, using the back of a large spoon to spread outward. The crust should be about 3/8" (about 1 cm) thick. Set aside to cool. At this point the crust can be wrapped in plastic film and refrigerated if serving the next day.

    To complete pizza crust preparation, bake at 450 F for 10 min. Set aside to cool briefly before topping.

    Top as desired. Return to 400 F oven to bake toppings and cheese (approx 15 min).
