List of Ingredients
1/2 cup chopped green pepper
1/2 cup chopped onion
1/2 cup salsa
1 can black beans, undrained
cumin and chili spices to taste
chicken breasts strips (about 9 ounces)
1/2 cup whole kernel corn
2 cups water
1 1/2 cups uncooked couscous
1/2 bup chopped fresh cilantro Recipe
1. Heat skillet over medium-high heat. Add pepper and onion and cook for 2-3 minutes.
2. Stir in beans, salsa, frozen chicken, spices and corn. Heat to boiling. Reduce heat to low; cover and simmer about 5 minutes; stirring occasionally, until chicken is thoroughly heated (break up large pieces of chicken if desired)
3. Heat water to boiling. Stir in couscous; remove from heat. Cover and let stand 5 minutes, Fluff with fork.
4. Spoon couscous onto plates and top with chicken mixture. Sprinkle with cilantro.
