    3 cups cooked brown rice
    1 medium onion diced
    1/2 cup grated carrots
    1/2 cup diced green pepper
    2 eggs
    Butter spray
    1 cup cooked cubed chicken breast
    2 Tablespoons soy sauce
    1 cup frozen corn heated in microwave 4 minutes
    1 cup peas heated in microwave 4 minutes
    2 Tablespoons garlic powder
    2 Tablespoons healthy oil

    Cook brown rice as indicated on package.

    Scramble eggs, remove from pan.

    Using the same pan you used for the eggs, Brown onion, green pepper, and carrots in healthy oil about 10 minutes, remove from pan.

    Spray large pan with butter spray and add rice. Toss with soy sauce and garlic. Add chicken, corn and peas, then toss in eggs, onions, peppers and carrots. Stir for an additional 3 minutes to warm the other ingredients.

    Makes about 3-4 servings if eating as main dish. Makes about 6-8 servings as a side dish.
