1 tbsp margarine
1/4 cup each chopped onion and celery
1/2 small garlic clove, mashed
2 cups water
1 cup chopped carrots
3 oz pared potato, chopped
2 packets instant chicken broth and seasoning mixRecipe
In 1-quart saucepan, heat margarine until bubbly and hot; add onion, celery, and garlic and sautéé, stirring constantly, until onion is soft. Add remaining ingredients and bring to a boil. Reduce heat, cover, and let simmer until vegetables are soft, about 20 minutes; let cool slightly. Pour mixture into blender container and process at low speed until smooth; reheat if necessary.
