Vegetable Chili

List of Ingredients
1 can light red kidney beans
1 can diced tomatoes
2 med to large zucchini, diced
2 med or large squash, diced
1/2c frozen corn
1 package French's Chili Mix
1 packet splenda
Recipe
Heat cooking spray in a pan and saute squash and zucchini until just tender. Add corn and cook a minute more. Add kidney beans, tomatoes, chili mix, and splenda packet. Bring to a boil and simmer 20 minutes, covered, stirring occasionally.
This makes a great vegetarian chili! I was skeptic at first, but I love it!
I don't like tomato chunks, so I pulse the can of diced tomatoes in the blender a couple of times before adding it.
I also don't like onions or peppers, so if you do, just make sure do saute them like the zucchini and squash. This usually takes me all of 10 minutes to make and keeps me full!
