    Barley and Bean Salad - Core

    List of Ingredients




    1 cup barley
    12-ounce can navy beans, drained and well rinsed
    _ cup chopped cilantro leaves
    2 tomatoes, diced
    1 cup corn kernels
    1 avocado, diced
    _ cup chopped celery
    _ cup chopped sugar snap peas

    Dressing:
    1 tablespoon olive oil
    2 tablespoons balsamic vinegar
    1 tablespoon lemon juice

    Recipe



    Place the barley in a large pot of boiling water and cook for 30 minutes or until tender but not soft. Drain, refresh under cold running water and allow to cool. In a large bowl combine the barley with the remaining salad ingredients. To make the dressing, whisk together the oil, vinegar, and juice and toss through the salad. (serves 6)
