Cool Lemony Couscous Salad - Core

1 cup couscous
1 cup very cold water
1 cup frozen peas, cooked and chilled
1 green onion, thinly sliced (green and white)
1/2 cup chopped Italian Parsley
1/2 cup chopped Cilantro
1 lemon (zest and juice)
1 tsp. Olive Oil
Salt and Pepper Recipe
Put couscous in a large bowl and pour the cold water on top. Set aside and allow the water to moisten the couscous (about 10/15 minutes).
While couscous is plumping up, prepare other ingredients (peas, green onion, herbs, etc.). When couscous is ready, add peas, green onion, herbs, lemon zest, lemon juice, olive oil, salt and pepper (to taste) and mix well with a fork. Serve cold or at room temperature. If you like, sprinkle a little parmesan cheese on top, but it should be fine just by itself.
