Maple Sweet Potato Casserole - Core

1/3 C yellow cornmeal
1 1/2 C skim milk
2 C mashed cooked sweet potato (about 1 1/4 lbs)
2 tsp C maple extract
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp allspice
2 eggs, lightly beaten
Vegetable cooking spray
Recipe
Place cornmeal in medium saucepan. Gradually add milk, stirring with a whisk until blended. Bring to a boil; reduce heat to medium. Cook, uncovered 2 minutes, stirring constantly with a wire whisk. Remove from heat; stir in margarine. Set aside
Combine sweet potato and next 6 ingredients in a large bowl; stir until well blended. Gradually add cornmeal mixture, stirring constantly. Pour into a 1 1/2 quart casserole coated with cooking spray. Bake at 350 for 40 minutes. Let stand 10 minutes before serving.
What I did to make it core:
I omitted the butter and used liquid butter flavoring. I omitted the syrup and used maple flavoring and splenda. I'm sure you could use one of those flavored sf syrups (kaluha comes to mind, cinnamon, vanilla,etc) instead for the sweetnener.
The texture is firm, like a baked pie. I'm sure this could work for pumpkin as well.
