    Twice Baked Potatoes - Core

    2 medium-sized baking potatoes
    small amount of plain soymilk
    4 tablespoon of plain soy yogurt
    salt and pepper
    chopped chives (about 4 T.)
    1/4 cup of grated soy cheese
    paprika

    Recipe



    Bake 2 medium-sized baking potatoes until done. Remove from oven (but don't turn it off) and allow to cool slightly. Slice in half the long way round. Scoop out meat of potato, leaving some meat intact to form the "shell." (If you don't leave some, the potato will fall apart.) Place meat in large mixing bowl. Add small amount milk and mix. Add 4 T of plain soy yogurt and salt, pepper, and chopped chives (about 4 T.) Mix well so that no lumps are left in the potato. Add 1/4 C. of grated soy cheese. Mix and return mix to "shells." Sprinkle liberally with paprika, and return to oven until slightly browned. Makes 4.
