    Green Beans and Portabello Mushrooms

    Serves 2.
    On Core, count 2.5 pts for the whole recipe

    List of Ingredients




    Enough fresh green beans for two people (ie, a fistful)
    PAM cooking spray
    1/2 lg. onion, diced
    2 potabello mushroom caps, thinly sliced
    1/4 c. white wine (1 pt)
    1/2 c. ff half and half (1.5 pts)
    salt and pepper to taste

    Recipe



    Wash and trim the green beans, and soak in cold water for about 20 minutes. Drain and cut into 1" long pieces. Boil for about 5 minutes and drain again.

    Saute the onions in a PAM-sprayed pan over medium-high heat until soft, about 5 minutes. Add the mushrooms and combine. Cover and cook until the mushrooms are soft, just a few minutes. Add the green beans to the mushroom mixture, cover and cook 3 - 4 minutes.

    Add the wine and ff half and half and simmer gently til heated through. Add salt and pepper to taste.
