Stuffed Onions - Core

1/2 C bulgar
1/2 C water
6 large sweet onions
12 oz ground beef
6 cloves garlic, minced
1 t oregano
1/2 t each salt and pepper
1/2 C chicken broth
14 oz can diced tomatoes, undrained
1/2 C soy parmRecipe
Combine bulgar and boiling water. Let sit, covered for 20 minutes.
Cut off the top and bottoms of onions and peel. Hollow out the centers using a knife or appler corer. Drop into boiling water and blanch for 5 minutes.
Drain and rinse with cold water.
Brown ground beef and garlic on stovetop. Add spices, stock, and tomatoes. Bring to a boil.
Fill centers of the onions with mixture and place in crockpot. Pour the rest over the onions. Cook on low for 8 hours or high for 4.
*review: The onions were odd but not bad. I would take more of the center part out next time. This would be excellent instead of rice in stuffed peppers.
