ZUCCHINI "FRIES" - Core

INGREDIENTS
2 medium-sized zucchini, halved and cut into 3-inch-long spears (I use yellow squash too)
2-3 cloves of garlic, minced
1 TB extra virgin olive oil
Salt and freshly ground black papper
Balsamic vinegar
1. Prehead the oven to 450 F. Lightly spray a baking sheet.
2. Combine the garlic with the oil in a small bowl. Arrange the zucchini skin-side down on the roasting pan. Brush the cut sides with the oil and sprinkle with salt and pepper.
3. Roast for about 20 minutes, until the squash are tender and lightly browned.
4. Transfer the squash to a serving plate. Drizzle lightly with the balsamic vinegar. Serve hot.
Sometimes I just toss the zucchini sticks with the olive oil and garlic in a small bowl, instead of brushing them. They are delish!
