    Peanut Butter Candy

    Peanut Butter Candy

    3 cups white sugar
    1 3/4 cup light Karo
    1 cup water

    2 (18oz) jars of peanut butter, the good kind,Jif
    peterpan, reese,ect

    Recipe



    In a suacepan, stir together sugar, Karo, and water.
    Place on stove, on High, bring to boil ,let boil until it
    reaches 285degrees on the candy thermometer.
    while it is cooking put the peanut butter in a big bowl,
    glass, or a large pan, it is best if you push the peanut
    butter out to the edges, making a bowl shaped hole.
    so you can pour the hot syrup in the middle
    As soon as the sugar mixture reaches 285 , pour in pan with the peanut butter, MIx QUICKLY and thoruoghly.
    spread onto wax paper or a nonstick surface,like a counter
    top.Spread out to about little over 1/4 inch thick ( a pancake turner works great here) Quickly cut into bite size pieces with scissors or a
    pizza cutter. taste like a clark bar center

    a few hints:
    do not stir at all while it is coming to a boil or as it cooks. keep the medal spoons out of the syrup..

    we use 2 -18 oz jars of peanut butter, but you dont have to
    scrape them clean,,( I think perhaps the original recipe
    called for 4 cups.of peanut butter.)
    There is so much oil in the peanut butter, you dont have to
    worry about it sticking to you sink top or table top.
    The waxpaper is a nuisance,

    do work quickly after the syrup is in the peanut butter,
    and not mix it to death..you may even have places where the
    peanut butter doesnt get all mixed in . the more you work
    it , the less flaky it will be.

    Althought I have made this by myself, it is always nice to have someone there to help, one to pour
    the syrup and the other to start mixing it together..and
    two people cutting it up, gets it cut up before it sets up
    too firm...
    you are cutting it up when it is still very warm,starting at the outer edges and working your way to the center.

    This sounds complicated, but isnt really. Each batch I make
    is slightly different from one another..some flakier,some
    a little harder, but it is so good.. it is worth the effort

    I have two batches made and still want to make some more.
    Be careful you don't burn yourself on the hot syrup!
    ( and remember, its 2 Jars of peanut butter,approx 35oz.)
