Chocolate Caramel Chews
List of Ingredients
- 1 stick butter
- 1/3 cup sugar
- 1/3 cup brown sugar
- 1 egg yolk
- 1/2 teaspoon vanilla extract
- 1 ounce unsweetened chocolate, chopped
- 1 cup flour
- 1/2 cup mini chocolate chips
- 20 to 24 caramels, unwrapped
- CHOCOLATE GLAZE
- 2 ounces semisweet chocolate, chopped
- 1 tablespoon water
Instructions
- Beat together butter and sugars until light and fluffy. Beat in yolk and vanilla.
- Melt chocolate in top of double boiler over simmering water or in the microwave on high (100 percent power) for 1 minute. Stir into mixture. Stir in flour, then mini chips. Beat mixture until well blended.
- Chill until dough is stiff, 1 hour or more.
- Preheat oven to 325 degrees.
- Round each caramel slightly by pressing the corners in. Wrap about 3 tablespoons dough around each caramel, being sure to seal tightly. You should have enough dough to wrap about 20 caramels.
- Bake for 20 minutes or until cookies feel dry to the touch. Do not overbake.
- Remove from oven and allow to cool completely.
- When cookies are cool, drizzle with chocolate glaze. Allow to dry. Makes 20 cookies
- To make chocolate glaze: in top of double boiler over simmering water, melt together 2 ounces semisweet chocolate, and 1 tablespoon water. Stir until smooth. Cool slightly before using.
Final Comments
I usually make my own caramels for this recipe. Purchased caramels get kind of hard after they are baked or you can substitute Rolo candies for the caramels. (The are a soft caramel candy with a chocolate coating that don't get to hard after the cookies are baked)
