Chocolate Covered Cherry Cookies
1 1/2 cups flour
1/2 cup cocoa
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup margarine, softened
1 cup sugar
1 egg
1 1/2 teaspoon vanilla
1 10 ounce jar maraschino cherries
1 6 ounce package chocolate chips
1/2 cup Eagle Brand milk
Stir together flour, cocoa, salt, baking powder and baking soda. In another bowl, beat together butter and sugar on low speed until fluffy. Add eggs and vanilla. Beat well. Gradually add dry ingredients to creamed mixture. Roll in 1-inch balls. Place on ungreased cookie sheet. Press down center of dough with thumb. Place a cherry in center of cookies, Bake at 350 degrees for 10 minutes. cool. Melt chocolate chips with Eagle Brand milk. Heat until chocolate is melted. Stir in 4 teaspoons of cherry juice. Spoon about 1 teaspoon over each cherry cookie. Makes 48 cookies.
