Best-Ever Potato Salad
From Good Housekeeping, July 1951 edition. This recipe comes from my Great Aunt Marion Dennis. I still make it and my husband thinks it is still one of the best potato salads he has ever eaten.
List of Ingredients
- 4 cups diced, cooked potatoes (or can use macaroni)
- 1 1/2 cups diced celery
- 1/4 cup cut-up scallions or onions
- 1/4 cup sliced radishes
- 2 tablespoons minced parsley
- 1 cup mayonaise
- 1 tablespoon vinegar
- 2 teaspoons prepared mustard
- 1/2 teaspoon celery seed
- 1 1/2 teaspoons salt
- 1/8 teaspoon pepper
Instructions
- Several hours before serving, combine all ingredients, chill. Garnish with tomato or hard cooked egg wedges, sliced olives, grated carrots, or sweet pickles. Makes 6 servings
