    Cranberry Salad

    adapted from a Southern Living recipe


    List of Ingredients


    • 2 cups fresh or frozen cranberries, thawed
    • 1 cup sugar
    • 1 (3 ounce) package lemon flavored gelatin
    • 1 cup boiling water
    • 1 cup drained crushed pineapple (original recipe calls for celery)
    • 1 cup chopped walnuts (I use pecans)
    • lettuce leaves


    Instructions


    1. Position knife blade in food processor bowl, add cranberries. Process 30 seconds, or until chopped.
    2. Combine cranberries and sugar in a large bowl, let stand 1 hour or until sugar dissolves.
    3. Combine gelatin and boiling water in a large bowl; stir 2 minutes or until gelatin dissolves. Chill until the consistency of unbeated egg white.
    4. Stir cranberry mixture, pineapple, and nuts into gelatin mixture. Pour into a lightly oiled 4 cup mold. Cover and chill until firm.
    5. Unmold salad onto a lettuce lined plate. Garnish if desired.
