    Ultimate Stuffed Potatoes


    List of Ingredients


    • 6 slices bacon
    • 4 large baking potatoes
    • 1/4 cup butter
    • 1/4 cup whipping (I use 1/2 and 1/2)
    • 1 (8 ounce) carton sour cream (I use 4 ounces sour cream and 4 ounces cream cheese instead)
    • 3/4 cup (3 ounces) shredded sharp Cheddar cheese
    • 1/2 cup chopped green onions
    • 3 tablespoons Parmesan cheese
    • 1/2 teaspoon garlic salt
    • 1/4 teaspoon pepper
    • Chopped fresh or frozen chives, thawed


    Instructions


    1. Place bacon on a microwave-safe rack in an 11 x 7 inch baking dish; cover with paper towels. Microwave at HIGH 5 to 7 minutes or until bacon is crisp. Drain bacon; crumble and set aside.

    2. Scrub potatoes; prick several times with a fork, Place potatoes 1 inch apart on microwave-safe rack or on paper towels. Microwave at HIGH 14 minutes or until done, turning and rearrainging after 5 minutes. Let stand 2 minutes.

    3. Cut potatoes in half lengthwise; carefully scoop out pulp, leaving 1/4 inch thick shells. Combine pulp, butter, and whipping cream in a large bowl. mash until fluffy, Stir in sour cream and next 5 ingredients.

    4. Spoon mixture evenly into potato shell, and place on a baking sheet. Bake at 400 degrees for 10 minutes or until thoroughly heated. Sprinkle with bacon and chives. Yield: 8 servings


    Final Comments


    I usually just fry the bacon and bake the potatoes in the oven or better yet I prepare them on the grill.
