    2 cans (14 to 16 oz) sliced peaches -- drained, reserve juice
    ground cinnamon -- to taste
    2 tbs per cup of juice cornstarch
    2 cups jiffy baking mix
    2/3 cup milk
    4 tablespoons granulated sugar

    Recipe



    step 1:
    add cinnamon to peaches.

    while whisking (to avoid lumps), slowly add correct amount of cornstarch to peach juice.

    combine peaches and juice into saucepan, cook over medium heat until thicken.

    pour peach mixture into a 8 x 8 baking pan. set aside.

    step 2:
    combine jiffy baking mix and milk & mix well.

    turn onto floured surface & knead 20 times.

    roll out into shape of baking pan having it about 1/2" thick.

    place on top of peach mixture & sprinkle sugar on top.

    bake at 400* for 10 minutes. turn down heat to 350* & bake another 10 minutes or until lightly brown & dough is done.

    serve warm, room temperature, or chilled.

    Serving Ideas : also great with vanilla ice cream.

    NOTES :
    if using a 9 x 13 baking pan double recipe.

    if using 11 x 7 x 1 baking pan, use 3 cans (14 to 16 oz)
    or 1 can (14 to 16 oz) & 1 can (29 oz).
