HONEY PECAN CHICKEN

1/2 cup pecans
2 tablespoons cornflake crumbs
2 tablespoons honey
1 tablespoon reduced sodium soy sauce
4 (5 ounce) skinless, boneless chicken breasts
Recipe
1. Preheat oven to 425*. Line a baking dish with foil.
2. Finely chop the pecans in a food processor. (I just use my food chopper) Sprinkle the pecans and cornflake crumbs on a sheet of waxed paper. Combine the honey and soy sauce in a shallow bowl. Dip both sides of chicken in the honey mixture, then dip into the pecan mixture to coat. Arrange on the foil lined baking sheet. Spray lightly with cooking spray. Bake until the chicken is cooked through, about 5 minutes on each side.
