    List of Ingredients




    1 lb Red bliss potatoes cut into 1 ½ inch cubes
    1 lb sweet potatoes pelled and cut into 1 ½ inch cubes
    4 tsp olive oil
    2 onions chopped
    6 Tb fat free mayo
    3 Tb chopped cilantro
    1 tsp lemon zest
    ½ tsp salt
    ½ tsp ground cumin
    ¼ tsp ground coriander
    1/8 tsp cayenne

    Recipe



    Preheat oven to 425.

    Spray pan, combine potatoes with 2 tsp oil in bowl, arrange in single layer on pan.

    Roast, tossing occasionally, until well browned and tender, 35-40 minutes.

    Transfer to bowl.

    Heat remaining 2 tsp.

    Oil add onions and cook, golden and tender, 12-15 minutes.

    Mix with potatoes.

    Combine mayo, cilantro, zest, salt, cumin, coriander and cayenne add to potatoes.
