    An unusual twist on a classic recipe!

    1 ½ cups salad oil
    2 cups sugar
    4 eggs
    3 small jars strained carrot baby food
    2 cups flour
    2 teaspoons baking soda
    1 teaspoon salt
    1 teaspoon cinnamon

    Grease and flour a 12 ½ x 17 ½ inch baking sheet.
    Cream salad oil and sugar until smooth. Add eggs, mixing well. Then add carrots.
    Mix flour, baking soda, salt and cinnamon together and add to creamed mixture. Beat well.
    Bake at 350 for 25-30 minutes.

    Icing:

    1 large pkg. (8 oz.) cream cheese
    4 teaspoons margarine
    ½ teaspoon vanilla (I use pure vanilla.)
    4 cups powdered sugar
    2 cups pecan pieces

    Beat softened cream cheese and margarine until fluffy. Add vanilla mixing until blended. Add powdered sugar and mix until smooth. Add pecans and stir just until mixed.
    Refrigerate and cool until frosting is set. Then cover.
