    List of Ingredients


    • ¼ cup butter
    • ¼ cup chopped onion
    • ¼ cup flour
    • 1 can chicken broth (14oz)
    • 1 can Carnation Evaporated Milk (12oz)
    • 2 large or 3 medium baked potatoes – cooled


    Instructions


    1. Melt butter in large saucepan over medium heat. Add onion; cook stirring occasionally, for 1-2 minutes or until tender. Stir in flour. Gradually stir in broth and milk. Scoop pulp from one potato and mash. Add pulp to broth mixture. Cook over medium heat, stirring occasionally, until mixture comes to a boil. Dice remaining potato(es); add to soup. Heat through. Season with salt and pepper, garnish as desired.
      Yield: 4 servings.

    2. Toppings (pick your favorites):
      Crumbled bacon
      Shredded cheese
      Chopped green onions
      Sour cream
      Olives
